In honor of National Hispanic Heritage Month, I decided to share this tasty and healthy recipe. I hope you enjoy my guilt free version of this Hispanic treat! Invite your friends and family over for a celebration. I will guarantee they will leave with a smile on their face and warmth in their heart!
STUFFED POBLANO PEPPERS
6- 8 Poblano Peppers
bake and remove skin once it is cooked enough to peel, remove seeds
1/2 red bell pepper – chopped and seeds removed
1/4 small onion – chopped
1/2 c kale chopped
1 tsp olive oil
saute all together and set aside
Next
1 lb ground chuck
brown and drain fat
add
1/3 small onion – chopped
1 small tomato – chopped
1/2 jalapeno – chopped
1 tsp salt or salt to taste
1/2 tsp ground garlic
continue cooking for 5 minutes
1 1/2 c Feta cheese
Place Poblano Peppers in a casserole and open just one slit on each pepper
layer feta, then ground chuck mixture, then bell pepper mixture, finish with remaining feta Bake at 400 degrees for approximately 20 minutes

Well I’m finally back!!!
These past few months have been extremely busy. Besides doing my normal duties… working with our artists, cooking, cleaning, laundry, etc., being a wife, a mother and a grandmother are at the top of my list !!! A few months back my husband and I decided it was time to do a little home refresh by painting our house and we wanted to do it ourselves, not only do ourselves but on a budget. If you have ever painted your house you know it’s not just about putting that paint on those walls. There’s prep work (lots of it), then the painting and after that the clean up (lots of it), then you have to put that room back together again!!! It sounds so easy, right??? Not if you’re going to purge and clean every little thing! So we decided that we needed to have a garage sale, not so easy but fun. Then we posted things on Craigs List, then consignment shops and finally donation centers. My favorite is Thrift Smart in Nashville.
So we’re finally getting back to normal, well except that I’m still going through boxes of photos and not to mention I have yet to tackle My beads and jewelry making supplies. YIKES!!!! I’d better hurry! I just realized I need to prepare for my upcoming 2dangle shows!!!!!! Oh, and my painting supplies!!! I still have to paint the picture for our kitchen wall… stay tuned;).

Its “full on” summer here in Nashville and for our family, that means much of our free time is spent at the pool. Our grandsons, The Little Cooks, have learned to be great little swimmers! Zealand and Soren demonstrate various swimming strokes along with other crazy fun in this video. They have a blast at the pool but have also learned some great safety tips to share with others.
